I always use light virgin olive oil.
low heat. pasta does not require high heat or a long period of time. use canola oil for your experiments. it is cheaper.
Philipe Berio is recommended by Rao's Restaurant in New York and I use it all the time. I have never used olive oil for extensive heating over long periods.
