You should keep it in a cool dark place. Heat is what will make oil rancid.





Extra virgin olive oil has a different appearance from regular (not EV) olive oil, but it imparts a stronger flavor. I use extra virgin for flavor applications, but regular olive oil for when I don't want to impart such a strong flavor.

1. Yes, there is. Darker versions, like extra-virgin, have a stronger olive flavor. Use them in salads and for drizzling on crusty bread. Don't waste it in regular cooking because the heat usually destroys that delicate olive flavor. Instead, use lighter olive oil for cooking.





2. Olive oil, or any oil, becomes rancid if subjected to a warm and humid environment. Store oils in a cool dry place away from direct sunlight.
